WILTED GREENS WITH WHITE CONCORD GRAPES AND FETA

    THE MARVELOUS GREENS OF OCTOBER CAN BE AN INSPIIRATION !

    Before anything, caramelize enough sweet onion for as many persons you are serving Set the onions aside
    Lightly shred a variety of greens in olive oil and garlic:
    Mustard
    Arugula
    Chard
    Beet greens

    Pit and lightly sauté white or purple concord grapes
    Crumble Feta cheese
    Chop fresh dill

    Combine the wilted greens with olive oil and vinegar
    Add the grapes, Feta, dill and onions
    Toss
    Serve
