Veggie fajitas can vary enormously by choice of veggies and availability of fresh produce

    Have available, small dishes of chopped tomatoes, sliced avocado with a squeeze of lemon or lime, shredded lettuce, grated cheese, chopped scallions, black beans, etc. all choices. Warm tortillas in the oven or on a hot skillet

    Saute vegetables : chopped onion, red pepper, zucchini, potato, yellow squash, mushrooms, etc. in olive oil with fajita seasoning


    Add fajita seasoning to sautéed vegetables

    Serve sautéed vegetables in a serving bowl
    Have warm fajitas on a plate with a clean napkin keeping them warm
    Have the small dishes of condiments ready
    Each person wraps veggies and condiments



    I use Pensy's Fajita Seasoning and follow the directions on the package: 1-2 Tbl Fajita Seasoning
    1-2 Tbl water, let stand for 3 minutes
    Add ¼ cup oil & ¼ cup lime juice or vinegar
    Saute the veggies in the seasoned oil
