Tortilla Soup

    This is an unorthodox and super easy Tortilla soup!

    Tomato soup:
    2 carrots
    2 celery ribs
    1 medium onion
    3 garlic cloves
    3 Tablespoons olive oil
    41/2 cups canned tomatoes
    3 to 4 cups of water

    Roughly chop carrots, celery, onions and garlic. Simmer in olive oil with salt & pepper to taste. Add tomatoes and water. Simmer uncovered, stirring occasionally for about 20 minutes. Puree in a blender.

    Tortilla Soup transformation:
    Ladle soup into individual bowls
    Add :
    Slices of avocado with a squeeze of lime
    crumbled Feta or Mexican cheese
    cilantro (chopped or in whole leaves)
    tortilla chips

    Serve
