HERBED GOAT CHEESE IN OLIVE OIL

    This is a simple way to prepare goat cheese for salads, sandwiches and cheese platter appetizers.

    1 log of goat cheese
    enough best olive oil to cover goat cheese medallions
    3 cloves of garlic, minced
    hot pepper or hot pepper flakes
    1 Tablespoon chopped herbs ( oregano, sage, basil, etc.)

    Cut goat cheese log into medallions (your own choice of size)
    Roll medallions in herbs
    Place herbed medallions in clean glass jar
    Add olive oil to cover
    Add garlic and hot pepper
    Let stand at room temperature for several hours
    Serve

    After serving, put remaining medallions in refrigerator. Let stand again at room temperature for future servings.
