GREEN BEAN SALAD

    This will serve about 6 people.

    1 pound green beans
    1 medium onion, thinly sliced
    cup best extra virgin olive oil
    1 squeeze of a lemon
    teaspoon mustard
    1 teaspoon chopped herbs (oregano or basil)
    1 Tablespoon balsamic (or other wine) vinegar
    salt & pepper to taste

    Cook green beans in boiling salted water until tender
    Drain
    In the serving bowl, whisk olive oil, vinegar, mustard lemon juice, salt & pepper
    Add drained green beans to dressing
    Toss
    Serve
