So many ways the people of the world have for making pesto from cilantro leaves. This is a very good one.

    1 cup lightly packed cilantro leaves (some stems are fine)
    cup parsley leaves
    1to 2 cloves of garlic
    1 shallot or scallion
    cup olive oil
    2 Tablespoons toasted pine nuts or walnuts
    Squeeze of fresh lemon or lime
    Salt & pepper to taste

    Puree all ingredients in a blender
