PUREE OF CELERY ROOT

    Simple but delicious way of preparing celeriac or celery root.

    1 medium celery root
    2 Tablespoons heavy cream
    3 Tablespoons butter
    salt & pepper to taste

    Peel and cut celerey root into " cubes
    Steam or roast in an oven (cover with foil if in an oven)
    Cook until tender (20 minutes or so)
    Place in a food processor
    Add butter and cream
    Whir until creamy
    Add salt & pepper to taste
