ASPARAGUS WITH LEMON VINIAGRET AND TOASTED BREAD CRUMBS

    SPRING ! ASPARAGUS!

    Celebrating the marvels of early, we purchase great bunches of "just cut" asparagus when we can. Adding the simplest of ingredients enhances the flavor of the asparagus. Bread crumbs, toasted with garlic and olive oil make a delicious addition.

    Fresh asparagus,

    Vinaigrette dressing ( olive oil, lemon juice, a dash of mustard and salt & pepper)

    Bread crumbs ( stale bread or toasted fresh bread, buzzed in the food processor until crumbs, then lightly sautéed with minced garlic, salt & pepper)

    Break asparagus stalks where they easily break, discard ends Steam asparagus lightly, drain
    Pour vinaigrette dressing over asparagus
    Sprinkle bread crumbs on top
    Serve
